In Stropharia the mature spores are very dark brown so once the cap has expanded the gills would show that colour to some degree, which is not the case here.

One of our native truffles. There is a thin white skin over a chambered, light brown interior. In some of the specimens bits of the skin have broken/eroded/ben eaten away and you can see a little of the interior.
